Fritters
Ingredients
- 1 mug boiled yam, mashed
- 1 egg yolk
- 1/4 mug milk
- 1/4 mug root crop flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt

Preparation

Wash, peel and chop the tubers into small pieces. Place in a saucepan of water and boil until cooked.

Drain off the water and mash.

Combine with all other ingredients

Fold in 1 stiffly beaten egg.

Half fill the deep fat frying pan with oil.

Drop spoonfuls of the mixture into deep frying pan and cook until golden brown (cooking time approximately 8 - 10 minutes).
