Sweet potato mash

Ingredients

Preparation

  1. Wash, peel, chop, boil and mash the sweet potato tubers.
  2. Press the mashed potatoes through a sieve.
  3. Add butter, egg and orange juice. Mix well.
  4. Place in an oven proof dish. Sprinkle with brown sugar and cinnamon.
  5. Bake in a moderately hot oven ( 180 - 190°C) for 30 minutes or until the top has turned brown.
